Countdown to Game Day: Vanderbilt

How to get to the stadium:
- Park downtown [parking garages are free on Saturdays] and walk to the stadium

{Shuttles cost $1.50 each way, and beverages/coolers are not allowed so be mindful of that before boarding}

TAILGATE
A few tailgating notes:
- Tailgating sites open at 8 AM
- (12 PM) Tiger Walk occurs 2 hours and 30 minutes before kick off at the pedestrian bridge over Providence
- (1 PM) The stadium opens 90 minutes before kick off
- Remember to keep any pets on a leash

opens in a new windowLighter Spinach & Artichoke Dip
2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
1/2 cup fat-free sour cream, divided
1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
1/4 teaspoon black pepper
3 cloves garlic, minced
1 (14 ounce) can artichoke hearts, drained and chopped
2 (8 ounce) packages 1/3-less-fat cream cheese, at room temperature
1 (10-ounce) package frozen chopped spinach, thawed, drained and squeezed dry
- Preheat oven to 350°F. Spray 1 1/2-quart baking dish with nonstick spray.
- Combine 1 1/2 cups mozzarella, sour cream, 2 Tablespoons Parmesan, pepper, garlic, artichoke hearts, cream cheese and spinach in a large bowl. Stir until well-blended. Spoon the mixture into the prepared baking dish. Sprinkle with 1/2 cup mozzarella and the remaining 2 Tablespoons Parmesan.
- Bake for 40 minutes or until bubbly and golden brown on top. Serve with vegetables or chips (extra calories for the chips!)
