Lighter Spinach & Artichoke Dip

2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
1/2 cup fat-free sour cream, divided
1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
1/4 teaspoon black pepper
3 cloves garlic, minced
1 (14 ounce) can artichoke hearts, drained and chopped
2 (8 ounce) packages 1/3-less-fat cream cheese, at room temperature
1 (10-ounce) package frozen chopped spinach, thawed, drained and squeezed dry

1. Preheat oven to 350°F. Spray 1 1/2-quart baking dish with nonstick spray.

2. Combine 1 1/2 cups mozzarella, sour cream, 2 Tablespoons Parmesan, pepper, garlic, artichoke hearts, cream cheese and spinach in a large bowl. Stir until well-blended. Spoon the mixture into the prepared baking dish. Sprinkle with 1/2 cup mozzarella and the remaining 2 Tablespoons Parmesan.

3. Bake for 40 minutes or until bubbly and golden brown on top. Serve with vegetables or chips (extra calories for the chips!)

2 – 12 roll packages of Hawaiian Sweet Rolls
2 – 16 oz Jimmy Dean Sausage, Original flavor
12-14 large eggs
1- 11 count package Great Value colby jack cheese slices
¼ cup butter
¼ cup syrup

Make this: Loaded Ranch Dip

This week’s Pinterest creation is Loaded Ranch Dip – yum.

-1 cup light sour cream
-1 cup light mayonnaise
-1 packet of Hidden Valley Ranch dressing mix
-1 lb bacon
-3-4 green onions, sliced
-1 cup shredded cheese

Instructions:
1. Cook bacon, then chop into pea-sized crumbles and set aside.
2. Mix the sour cream, mayonnaise, and ranch dressing mix together in a bowl.
3. Fold in the bacon, green onions, and shredded cheese.
4. Keep cold and enjoy with sturdy crackers. That’s it!

The Mizzou Tigers kick off this Saturday, 6:15 PM at Memorial Stadium against the Tennessee Volunteers. This weekend is ‘Black Out,’ so Tiger Fans – wear black.

PRE-GAME:

The CoMo Connect public transit system offers game-day shuttles to the stadium from many popular pre-game locations, parking garages, and hotels. Parking garages are free on Saturdays but you will need $1.50 to ride the shuttle to Memorial Stadium.

The Mizzou Tigers kick off this Thursday evening, 8 PM at Memorial Stadium against the Mississippi State Bulldogs.

PRE-GAME:

The CoMo Connect public transit system offers game day shuttles to the stadium from many popular pre-game locations, parking garages, and hotels for $1.50 each way (be sure to have exact change). Regularly scheduled routes will be free all day, and game day shuttles will beginat 6:15 PM.

Parking information:

  • Donor parking lots will open at 4:30 PMtraffic
  • Please do not arrive on campus prior to lots opening.
  • All vehicles must be cleared of the parking lots by 7:00 AM on Friday morning.
  • It is important to note for general public (non-donor) parking, for this game only, spaces will not be available in the Tiger Avenue and Parking Garage #7 structures.
  • All parking on the MU campus will be designated for students, faculty and staff for the evening.
  • Guests who do not have a season long football parking permit are encouraged to park in metered spots and city operated parking garages. To view a map of the different areas available Click Here.
  • Truman’s Landing will open to RVs on Wednesday evening at 6:00 PM.
  • All RVs will be required to park on the east side of Truman’s Landing (closest to Providence Road).
  • Entry WILL NOT be permitted into Truman’s Landing on Thursday morning between 7:00 AM-9:00 AM in order to best accommodate MU employees and students parking in this area and going to work and class.
  • All RVs must exit the lot by 12:00 PM on Friday afternoon. Exit WILL NOT be permitted between 7:00 AM and 9:00 AM in order to best accommodateMU employees and students parking in this area and going to work and class.

The Mizzou Tigers kick off this Saturday, 6:30 PM at Memorial Stadium against the Florida Gators. And, of course, it’s Homecoming!

HOMECOMING EVENTS:

Homecoming Talent Competition Monday-Thursday 6:30 PM at Jesse Auditorium. Seriously talented students will show off their skills to a packed house each night. Tickets will be sold at the door. Performances will also be projected at the MU Student Center and broadcast on livestream nationwide.

Almost Midnight Breakfast Thursday 9-11 PM at Tiger Plaza. Celebrate homecoming with a traditional breakfast and coffee. In case of rain, go to the MU Student Center. MU Students free, general public $5.

Homecoming Campus Decorations Friday 6-9 PM on campus. Skits and decorations created by Mizzou’s Greek Life will showcase the 2015 theme “Truman Goes to Work.” Firefighters, doctors, astronauts, and more will make an appearance at this year’s homecoming celebration.

NPHC Homecoming Step Show Friday 7:30 PM at Jesse Auditorium. $15 advance – $20 at the door, Tickets on sale through the MSA/GPC Box Office. Come out and enjoy the show put on by Mizzou NPHC chapters. The step show is always a hit among fans and first-time attendees.

Sheryl Crow Friday 7:30 PM at Missouri Theatre. Sheryl Crow is a nine-time GRAMMY winner who has sold more than 35 million albums around the world, and she happens to be a Mizzou Alum. Ticket prices range from $50 – $125 and MU Students are $25.

The CoMo Connect public transit system offers gameday shuttles to the stadium from many popular pre-game locations, parking garages, and hotels. Parking garages are free on Saturdays but you will need $1.50 to ride the shuttle to Memorial Stadium.
